Today I made apple upside down cake with stewed apples from last years harvest frozen in the freezer.. made a current cake mixture, then lined a tin with baking paper put maple syrup on the paper stewed apples on top of the maple syrup and the currant cake mixture on the top of that baked in the oven for 45 minutes at 180c turned it out upside down on to a plate and here you have it. Next time it will be a blueberry upside down cake. Last Thursday I made a pineapple and glacier cherry upside down cake. Eat with a fork and a dollop of ice cream yummy.
So light, ingredients 8 oz. Self raising flour, 7 oz margarine, 6 oz sugar, 3eggs, mix currants with flour how ever many liked this helps keep the currants from going to the bottom.
