As the doctor told me to get my cholesterol down by the llth August I have gone to eating cholesterol busting food. Like no white potatoes but instead eat sweet p otatoes, also I am roasting Edame beans, they are Japanese and is the Immature
soya bean. Today I cooked them in the instant pot and had them with sweet potatoe chips and cod fish cakes. Tomorrow I shall roast them and have as a snack. The same as you would crisps. They are delicious sprinkled with curry powder and so good for you.
UPDATE on Edame beans . I decided to roast some more Edame beans first put them in the instant pot with a cup of water pressure cook for 1 minute. , drain them off, put in to a baking dish sprinkle over a little olive oil and bake in the oven at 190 for 15 minutes or until a little golden colour, serve on a plate with a little sprinkle of salt. And boy does the baking of them bring out the taste. I snaked them for my tea. 😋
We are going through similar changes at our house. It's been a real learning journey for us. I'll be trying these ideas with edemame. We eat it often in salads and as a side veg. These sound yummy!

I've had frozen ones and really enjoyed them, and I like the sound of the baked version too.

I’m glad you enjoy them. I’ve tried edamame beans and thought they were awful. Maybe I had a bad batch they were tough and woody. Normally I like beans I often make a bean salad so I was surprised at how hard to digest they were.
