I like profiteroles too they look delicious happy belated birthday. I make my chocolate sauce with a couple of cut up mars bars (mars bars are milky ways in the US milky ways are 3 musketeers) a couple of tablespoons of milk or if serving for adults you can substitute milk for brandy and just melt in the microwave and stir you end up with a really fudgy sauce

I can honestly say if you lived near by I would be round to your house like a shot to try some. One of my favourites 😋
