I made a currant cake mixture of 8 oz of self raising flour 7 oz of stork margarine
6 ox brown sugar
2 eggs and chucked in currants in to the flour. With 1 level tsp baking powder
mixed all together and a little drop of water.
the mixture I devided in half , one half in to my stainless steel pudding basin put on lid. Put in instant duo pot on a trivet . And pressure cooked for 35 minutes. The other half of cake mixture. Went in to my cake tin lined with baking paper and baked in oven for 25 minutes.
when both done I had a spotty dick pudding from the duo pot and a currant sponge cake from the oven.
I decorated with blueberries and icing , glacier cherries and treacle on the other one.

they look delicious, I love my instant pot, makes cooking so easy. and so many things you can try. making sausage rolls and scotch eggs in there blew my mind.
