We are very into warm filling salads. This one is very healthy and very filling and all done in the Ninja.
I put caraway seeds, cinnamon and oil into the bottom of the ninja pot. Divide a whole cauliflower into small florets and add these to the pot and mix with the caraway seeds, cinnamon and oil mixture. I then turn the Ninja on bake 160c for 15 mins. Once the 15 minutes are up, I then add a drained tin of chickpeas and lots of Harissa paste into the cauliflower mixture, give it a quick mix and then carry on baking for another 15 mins and adjust temperature if needed, depending on the size of the florets. Whilst this is baking I wash and chop a load of lettuce, cucumber and tomatoes, scatter them on a large plate. Once the harissa spiced cauliflower and chickpeas are baked I then spread them all on top of the lettuce and then sprinkle with pomegranate seeds. I serve this with homemade flat breads and I usually make up a sour cream and chive sauce to go with it.
The flatbreads, and sour cream and chive sauce sound great accompaniments. Lovely meal!
