I picked some homegrown rhubarb from the garden and decided rather than making a crumble I would make some cordial. I love making cordials rather than buying them, simply because I know which ingredients are used. Yes lots of sugar but absolutely no chemicals.
It does always seem like a lot of sugar doesn't it? But I still think it's less sugar than in the bottles you buy, they always seem a bit too sweet for my taste. I had found a lovely soda here that was raspberry and lemon, it had hardly any added sugar and was carbonated, but they stopped selling it since Christmas, It's Italian and you can only buy it there now, although you can buy other varieties. So now I'm thinking I might try to recreate it. when the raspberries are in season

This is a cordial that is diluted with water, same as if you buy cordial from the shops.
The recipe as follows:
500g rhubarb - chopped into small pieces
Ginger - thumb size piece, grated
1 lemon (zest and the squeezed juice)
250g sugar (add more if you want it sweeter)
400ml water
Put everything into a saucepan and bring to the boil, then turn heat down and simmer for 15 minutes.
Put a muslin cloth over a sieve and then put this over a large bowl. Now pour in the hot rhubarb mixture onto the muslin and leave for a while to drain through.
Whilst the mixture is draining I sterilise some bottles and lids, as well as a funnel (you could use jars if you don't have any bottles and just spoon the cordial out when needed).
Once ready pour the strained rhubarb mixture into the bottles, using a funnel. I put the lids on but not tight.
I now put these bottles into the Ninja 15-in-1 with a rack laid in the bottom of the cooking pot. I put the bottles on the rack and fill the pot with water and bring to the boil. I boil for about 20 minutes and then carefully take the bottles out and tighten the lids. Leave to cool.
Drink diluted with water.
