I made this today to go with a cheese board tomorrow evening. It made almost 3 jars and is really tasty. A couple of tweaks to the recipe:
I added a couple of squirts of honey to balance the acidity from the vinegar.
It wasn't quite thickened enough so I added some cornflour mixed with water and simmered for an extra 5 mins and it worked.
I'm going to make it again for some Christmas gifts paired with some crackers and a little spatula or knife.
