Fruit Flan (Strawberries, Raspberries, Blueberries)
When I sorted out my cake tin cupboard I found a flan tin that I forgot I had. So had to use it, and made a fruit flan.

Last summer we had a wonderful large crop of cherry plums. We ate a lot fresh but I did manage to freeze some. Today I made a cherry plum frangipani tart. I based it on the traditional “Bakewell tart”. It has a pastry base, a layer of homemade raspberry jam, a frangipani cake filling and then I added the homegrown cherry plums on top. I made too much frangipani cake batter so made a few muffins as well.

At Christmas we had a secret Santa between the adults of our big family and I got a mug to make a microwave cake in, I finally made it this morning it turned out light and very tasty enough in the mug for two as a winter pudding with hot custard. I did it in my 900watt microwave for 1 minute and a 1/2 . It turned out lovely and light and enough for two as a winter pudding with hot custard. Something I shall make very often.

Chocolate cake delicious .
Managed another 3 meals for the freezer yesterday, so I am happier now with 7 meals now ready and in place for those days when a rest is needed
