I found a big jar of sweet mincemeat, January 2025 , the internet tells me it’s fine to use if still sealed as the high content of sugar in the mince meat is a preservative. So Mary berry’s Christmas cake is what I shall make today.

I shall add some glacier cherries and almonds for topping.
