Baking

I made some rhubarb crumble muffins with our homegrown rhubarb. I wanted to make something different to the normal rhubarb crumble so came up with this. I didn’t follow a recipe. Just made a normal sponge mixture but added extra flour to make it thicker so the rhubarb wouldn’t sink. Put raw fresh sliced rhubarb on top and then sprinkled a crumble mixture with added oats and ground ginger. Then baked for about 30 mins.
