Baking

I went out this morning and picked a medium sized courgette, and made a courgette and currant cake straight away. With olive oil and the usual cake mix and grated courgette. Brown sugar and four eggs , it has turned out lovely and moist and light.

I could put cream cheese and icing sugar on it with some squeeze of lemon to decorate but John and I prefer a straight forward cake.
