I had some plums and apples left over from last weeks fruit delivery so I made an upside down cake. Chopped up the apples and plums buttered a cake tin put the fruit in the bottom of the greased pan , made my usual sponge cake mix put on top of fruit and baked in the oven till a knife came out clean when I tested it. Turned cake out on to a plate and there you have a cake to eat on it’s own or a slice with evaporated milk, very versatile it goes well with a dollop of ice cream or hot custard. Xx
