John picked a load of beet root out of the polytunnnel and I am in the middle of cooking them in the instant pot, and once they are cooked you can slice them and put them in portions in the freezer. There is eight in the instant pot at the moment with 1 1/2 cups of water. I pressure cook them for 20 minutes on high pressure and they are done. Let the cool down peel and slice ready for the freezer. We love beet root in a sandwich with a little vinegar and sugar.

I love beetroot, unfortunately I hate the smell of it cooking, my mom used to boil it I think. I could smell it all around the house it was one of the worst smells to me but my mom liked the smell. Do you think it smells less cooking it in the instant pot Linda? As it is I only ever buy beetroot ready to eat, it would be nice to cook it fresh.
I don't adjust to cooking for two, I cook and freeze like I used to for four, I have a six foot tall freezer. As we grow a lot I freeze a lot and give it away to family as if they were still at home. Some of this frozen beetroot is for my liz, she likes it sliced in sandwiches or roasted whole or quartered as a side dish from freezer to air fryer for roasting.
Busy busy linda you must have a very organised freezer linda , how do you save and freeze all that produce . I have 2 under counter freezers these days , but when family all lived at home it was 2 x6 ft chest freezers .I am always chocked full I can't seem to adapt to just cooking for us two
You can't beat home grown. I have been using our Ninja 15-1 and its great for preserving. I can do the whole process in it from sterilizing, to cooking to canning.
